Chicken Quinoa Soup
My version of chicken quinoa soup. With lots of veggies!

- 1 tbsp Vega Antioxidant Oil blend
 - 4 cups Pacific Low Sodium Chicken Broth
 - 1/2 lb thin, cubed chicken breast
 - 2 cups sliced mushrooms
 - 1 yellow onion diced
 - 1/2 green pepper diced
 - 3 celery stalks diced
 - 1/2 bag shredded carrots
 - 3/4 cup dry quinoa
 - 1 cup water
 - 2 tbsp minced garlic
 - salt
 - pepper
 - oregano
 
 
In a large pot sauté onion for 6 minutes
 Add pepper, celery, carrots mushrooms, garlic and cook 5 minutes on medium heat
Add broth, water and quinoa
 Bring to a boil
Reduce heat to low and allow to simmer 15-20 minutes
