Calling all my one pot dinner fans! I shared this in progress on Instagram Stories and had so many questions about it that I figured it deserved it’s own post.
D rarely does the “surprise, I’ve invited people over for dinner” thing…but a few weeks after knee surgery even a day felt like a surprise. But it was the first Chiefs game, I was excited to see people besides my physical therapist and I had an idea!
{Are you a football fan?? I go through phases which I think are tied to what the weather is like outside, ha!! Plus in Florida we didn’t get most of the Chiefs or Mizzou games so I simply watched less.} It doesn’t quite feel like chili time yet, so I opted for something a little different to keep the protein and veggies both high.
Ground Turkey Soup Recipe
I’ve made a few variations on this depending on the veggies we have on had. One day I added okra, another peppers, it pretty much works with anything and for the non-kale lovers it’s easy to omit or swap for 1 cup rice to keep the bulk.
Ground Turkey Soup Recipe
Ingredients
- 1 frozen bag soup starter with chopped carrots, onions and celery (of course you can buy fresh and chop yourself, but I was not that ambitious)
- 2 pounds lean ground turkey
- 2 14 oz canes diced tomatoes no salt added
- 32 oz chicken broth not stock
- 1 cup green lentils
- 4 cups kale
- oregano, garlic, salt and pepper to taste
- optional: shredded cheese to top
Instructions
- One a large pot add celery, onions and carrots on medium high heat
- After 5-10 minutes (longer if frozen) add in ground turkey
- Cook 8-12 minutes for most of the moisture to evaporate from the turkey
- Add in spices, chicken broth and tomatoes, then bring to a low boil
- Reduce the heat and stir in kale
- Dish can stay on low for hours to enhance flavor or cook just 15 minutes on medium and serve
