During the FitSocial trip, we made a stop at the Anschutz Health and Wellness Center where we got to workout and then eat!!!
But of course this was a special meal prepared by a chef who talked us through the process and why he had chosen certain ingredients.
For my part the HUGE pile of veggies included in this dish got me immediately excited, but after that I was pretty stoked to learn some knife skills.
Chef went through a few different tips on how to keep all your fingers and get it done a little faster. One of the best things he shared was how to PERFECTLY cook quinoa and other grains.
Asian Quinoa Salad
For my part, I would cut the total amount of quinoa down so that it was more of a veggie salad with some quinoa. I would also buy pre-shredded veggies…just my two cents for making this easier!!
But I have provided the recipe as it was originally put together by the Wellness Center since they are the pros.Quinoa Salad Ingredients
- 2 cups quinoa, uncooked
- 2 carrots shredded
- 1 broccoli head shredded
- 1 cup shredded cabbage
- 1 red bell pepper diced
- 1 cucumber diced
- 1 avocado diced
- 1 cup edamame
Healthy Asian Salad Dressing Ingredients
- 1 tsp sesame oil
- 1 tsp lime juice
- 2 tbsp green onions diced
- 1/4 tsp ginger
- pinch of salt and pepper
Directions
- Soak quinoa in cold water for 1 hour
- Drain and rinse thoroughly
- Place quinoa and 2 cups cold water in pot, bring to boil
- Cover and turn down to simmer for 15 minutes
- While cooking dice, chop, shred anything needed
- Toss together
- Whisk together dressing in separate bowl, then pour in and mix well
