It’s the time of year to march to your own drum…or maybe I’m getting confused with the little drummer boy song. Either way you are going to love this dish which feels like the holidays thanks to the bright color provided by the ingredients.
For ages I’ve been convincing people to sneak extra veggies in by adding shredded carrots or zucchini to their oatmeal. This week I decided it was time to think outside the box and add in a vegetable that I simply don’t eat enough of…the beet.
Which means I give you this surprisingly delicious and sweet breakfast.
Beets and Berries Overnight Oats
Makes 2 servings of overnight oats gluten free and dairy free!!
Ingredients
– 1 cup Love Grown Super Oats Chia
– 1 cooked beet
– 1 1/2 cups unsweetened vanilla almond milk
– 1/4 cup cranberries (dried or whole)
– 1 tsp warm coconut oil
– 1 tsp Pure Canada maple syrup
– dash of cinnamon
Directions
1. In food processor pulse beet and cranberry (or buy shredded beats and save time!)
2. Combine all in ingredients in beautiful bowl
3. Place in refrigerator overnight
4. Wake up and consume a healthy happy breakfast!

Love Grown Super Chia Oats – I use these because they contain a variety of grains, chia and seeds already so I don’t have to do any extra work to get some extra nutrients. Plus they are gluten free which is a big issue for so many!
Fun fact – Did you know 80% of the worlds maple syrup comes from our Canadian friends?! I never use regular sugar in anything, EVER, but sometimes I need a touch of sweetness and in fact our muscles do need good carbs to aid in repair after exercise! At least I know this is unprocessed and contains antioxidants.
