Boerenkool is a traditional Dutch dish using kale and mashed potatoes, which is what I initially set out to make to go with our fish. Nothing against the good ol’ potato, but I was feeling more veggietastic and decided to attempt making this dish with cauliflower, broccoli and kale…needing a suitably weird name I went with Broccaulikale Mash.
There are only so many nights David will look at a plate with steamed broccoli and get excited, so this option added some great flavor to the fish, while getting some extra greens on the plate.
Whoop it up veggie fiends this one is a keeper, tasty, 15 minutes or less and short ingredient list! I’ve certainly enjoyed my share of cauliflower mashers, but lately my focus has been on HIGH NET nutrition to keep the sugar cravings at bay and my body fueled for training. However it still has to taste good…and these one tastes decadent!
Ingredients
- 1 cup steamed broccoli
- 1 cup steamed cauliflower
- 1/2 bunch kale with the ribs removed and the leaves washed
- 2 tbsp Unsweetened Cashew Milk {or vegan butter}
- 1 tbsp garlic
- freshly ground pepper, onion powder and salt
- 1 tablespoon EVOO {or I used Vega Antioxidant Oil blend}
Note: Yes my recipes usually only serve two…I have a teeny tiny food processor right now! Directions
1. Put veggies in a bowl with a couple TBSP water, pop in microwave for 3 min
2. In a pan, sauté garlic for a few minutes then add milk and shredded kale
3. Once kale is bright green, remove from the heat.
4. Put kale in to food processor first for better blending – then add steamed veggies and all spices.
