Did you know that lime, sweet potatoes, pumpkin seeds and chili powder are some of the defining elements of Southwestern flavors?
I learned this after debating whether I should be calling my current meal creations Southwestern or Mexican.
Do you go through phases with certain flavors?I’m trying to spend more time in the kitchen creating new memories around food and part of that for me is listening to the types of things my body is craving.
Right now I could be seeking the spicy foods to create a feeling of warmth both due to the cold weather and let’s be honest touch of stress.
Like it or not we associate foods with moods. I’m determined to change my comfort food story to include healthy instead of sugary.
One trick I’ve learned is using healthy fats and lots of nutrients to satisfy appetite and mind. Last night I pulled together a brand new meal that would meet my two rules: lots of veggies and easy.
Kale Slaw with creamy avocado dressing
Ingredients {single serving}
- 1-2 cups shredded kale {I used 2}
- 1/2 cup shredded broccoli
- 1/4 avocado
- 2 tbsp unsweetened almond/soy milk{for thicker dressing use plain yogurt {soy or regular}}
- 1 tbsp apple cider vinegar
- 1 tbsp Vega Oil or coconut oil
- 1/2 tbsp garlic salt
- Squeeze of fresh lime
- Chili powder {I like it spicy so I used a lot!}
- Fresh ground black pepper to taste
Optional:
- 1/2 cup black beans
- 1 tbsp pumpkin seeds
- 1/2 large baked sweet potato
Directions
- Mash avocado with fork in small bowl
- Add ACV, So Delicious, garlic salt, chili powder, lime and black pepper
- Place kale and shredded broccoli in a large bowl
- Dump on your dressing and…massage. Massaging kale is really the only way I’ve found to get it to soak up the moisture and flavor.
- I like to let kale dishes sit for awhile to soak in flavor before eating – great to make the night before and take for lunch.
