Mother Nature does a lot of things right…particularly sunrises which I shared a few of this week because I really believe they’re moments that allow us all to pause and simply breathe.
To be in one place with nothing on our minds, but “wow”. Here is one of my favorite moments from our trip to the beach yesterday.
That feeling of comfort is something I also find in food memories.
Chicken Quinoa Soup
Maybe the reason I have been craving soup lately is for that sensation of warmth and comfort. Thus when the new Runner’s World Cookbook arrived on my doorstep, thanks to my friends at RW, I immediately flipped to the soup section!
After finishing our day at the beach, I spent a few minutes putting together my spin on a Chicken Quinoa Soup from the book. I say my spin because I reduced the meat, increased the veggies and changed up the oil.
Chicken Quinoa Soup
Ingredients
- 1 tbsp Vega Antioxidant Oil blend
- 4 cups Pacific Low Sodium Chicken Broth
- 1/2 lb thin, cubed chicken breast
- 2 cups sliced mushrooms
- 1 yellow onion diced
- 1/2 green pepper diced
- 3 celery stalks diced
- 1/2 bag shredded carrots
- 3/4 cup dry quinoa
- 1 cup water
- 2 tbsp minced garlic
- salt
- pepper
- oregano
Instructions
- In a large pot sauté onion for 6 minutes
- Add pepper, celery, carrots mushrooms, garlic and cook 5 minutes on medium heat
- Add broth, water and quinoa
- Bring to a boil
- Reduce heat to low and allow to simmer 15-20 minutes
***UPDATE: After the first bowl I decided more veggies were still needed for my liking, added in shredded kale and some ginger per a reader recommendation…YUMMMOO.
RUNNER’S WORLD COOKBOOK OVERVIEW
Overall this book is full of some great recipes. If you’re confused about what to eat before and after runs to get the maximum results for performance then this cookbook will take all of the mystery out of that for you!!!
Unfortunately it caters to the way I wish I could eat {lots of eggs and yogurt}, so a number of the recipes are simply not something I can enjoy without major modifications.
Additionally, I’m a lazy cook. It’s the truth. I like 5 ingredient meals. I like cooking things in large batches to freeze some.
So while I am super happy with the results of this recipe and am already prepping to make the Warm Butternut Squash and Kale Salad, overall I don’t imagine this book will get a great deal of use from me. {There goes my shot at receiving any more free books}.
